I installed the heads on my engine rebuild today. I oiled the bolt threads and under the bolt head with engine oil, per instructions in the yellow Big-Block Ford book. The bolts torqued evenly to 80 ft-lbs, but they didn't seem to turn evenly going from 80 to 90. Should I remove them, re-oil, and reinstall? If so, how much oil should I use? It's only a fraction of a turn, so it's not much, but is it enough to worry about?

I'm no expert but I would not remove them.
I would just make sure you reach your target torque value.
