My '69 shortbed is running a 400H (from a '79) with an Automatic on the floor C6. My truck's a driver, not something I race or tow with. Nothing really wrong with the C6, except for some leaks and a tendency to slip out of Park. I'm looking into upgrading to a later model, 5 or 6 speed trans, but don't want to get creamed on cost.
Any recommendations on 5-6 speed transmissions to combine with the 400H?

I assume you mean 400? Never heard of a 400H. The 400 is a 385 series, so a ZF5 behind a 460 should work fine for you.
