Something in the neighborhood of 3.25 to 3.50 is a good compromise between power and mileage. With the torque a 460 puts out, I'd think you'd be happier with the 3.25, since it'll get you moving fairly quickly yet still allow you to keep up with traffic on the freeway without winding the engine up, which sucks gas. If you're ever going to be doing any towing or hauling, then shoot for the 3.50 area.

I started with a 3.0 in my 71 F100 460/c6. Then tried a set of 3.25's I like the 3.25's best. The 3.0's were great when not pulling a load. They left the line pretty good with the torque of the 460 and really took off with just a bit of peddle. I hauled a car on a trailer with the 3.0's and it did fine except on the bigger hills. I have'nt towed with the 3.25's yet but I think they will do fine.
I don't tow very often though so I am leaving the 3.25's in for now and keeping the 3.0's for future use.
